Avocado Salad with Grilled Blackberry Dressing Recipe

This avocado and blackberry salad is a great low carb treat! With sweet and smoky flavors, this recipe makes a perfect side dish for a summer night.

Ingredients

FOR THE SALAD

8 oz fresh arugula

1 avocado, skin removed and cut into small cubes

6 oz yellow or green beans, rinsed

12 oz fresh blackberries

4 oz goat cheese, crumbled

1/2 cup shelled pistachios, coarsely chopped

FOR THE BLACKBERRY DRESSING

3 tbsp grilled berry sauce

2 tbsp Colavita White Balsamic Vinegar

3 tbsp Colavita Mediterranean Extra Virgin Olive Oil

salt and pepper

Directions

FOR THE BLACKBERRY DRESSING

1. In a small bowl, combine the berry sauce with the White Balsamic Vinegar and Olive oil. Whisk to emulsify.

FOR THE SALAD

1. Place the arugula in a large bowl. Add in the fresh blackberries, goat cheese, yellow beans, avocado and pistachios.

2. Sprinkle the salad with salt and pepper and drizzle with some of the blackberry dressing. Toss the salad, passing the remaining dressing on the side.
