The Best and “Cheesiest” Vegan Mac & Cheese (Under 300 Calories)

Who doesn’t love a bowl of delicious and comforting macaroni and cheese? This recipe combines the taste of comfort food with a healthy and vegan twist.

The Best and "Cheesiest" Mac & Cheese

This easy and tasty macaroni and cheese will have you eating pasta without feeling guilty.

  • 1 cup Daiya cheddar style shreds
  • 2.5 cups Elbow macaroni
  • 1/2 cup Almond Milk
  • 1 tbsp Butter (I use earth balance)
  • 1 tsp Garlic powder
  • 1 tsp Breadcrumbs (for garnish )
  • 1 slice Cucumber (for garnish )
  1. Take the macaroni and boil it in 2 cups of water on the stovetop for 15 minutes. 

  2. Drain the macaroni and put it back into the pot. 

  3. Add the shredded cheese and butter. Stir frequently. 

  4. Mix in the milk and garlic powder. Stir. 

  5. Add the garnishes and serve!
