More often than not two foods that can be deemed people’s weaknesses are cheese and bread. Moreover, they often come hand in hand. Since keto is low carb, people find themselves having to give up the latter. However, this recipe will allow you to give up bread without notice. Grilled cheese sandwiches are a quick fix, making them both convenient and delicious. This keto cauliflower grilled cheese recipe allows you to go without sacrifice. Microwavable cauliflower rice allows this recipe to be prepared in under ten minutes. With a jaw-dropping flavor you’ll be in disbelief that what you are eating is as healthy as it seems. However, it really is. The ease of this recipe can be accredited to the simplicity of the ingredients and the short preparation time. This recipe makes for the perfect lunch, dinner, or even breakfast item. You can even add in scrambled eggs to make the meal scream, “good morning!”

Background:

Grilled cheeses are a staple food in my diet. They are quick to make and happen to be relatively mess-free, all while only requiring a few ingredients. The only downfall is that they aren’t considered health-friendly. When starting keto, I was on a mission to keep grilled cheeses in my diet. That is how cauliflower grilled cheeses came to be my saving grace. Even now, when having the option between a cauliflower grilled cheese or a regular one, cauliflower is my predominant choice. Not only is it healthy, but the cauliflower and Italian seasoning add a thrilling flavor and pleasant texture.

It’s also enjoyable to make as you get to see everything that is going into your meal through the quick step by step process. This recipe allows you to be in full control of each ingredient. Moreover, there are no complicated steps or unexpected twists to the process. Whether you are telling someone what you had for lunch or are preparing a meal for guests, when telling them you are making a cauliflower grilled cheese they will immediately be impressed. I’ve received this reaction many times, as while the recipe sounds intricate it can be made in just a few simple steps with only five ingredients.

Cauliflower Grilled Cheese Ingredients:

First, let’s chat ingredients..

  • Cauliflower: Use either one cup of cauliflower rice or one head of cauliflower. (I used cauliflower rice, as it makes for a quicker recipe and has no effect on the taste).
  • Eggs: Use one egg.
  • Parmesan Cheese: Use ½ a cup of parmesan cheese
  • Italian Seasoning: Use 1 teaspoon of Italian seasoning. You can mix it in with the rice or when you make the bread slice you can sprinkle some on each half. 
  • Cheese Slices: Use two slices of cheese (this can be American, Cheddar, Swiss, or any other preference). You can also use more than two slices if you desire. However, I find two slices is sufficient.

How to Make Cauliflower Grilled Cheese:

  • Prep the Cauliflower. Measure one cup of cauliflower rice or use one head of cauliflower without the stems. Put the cauliflower in a bowl and add in one egg
  • Add in Parmesan Cheese. Measure ½  a cup of parmesan cheese and add it to the bowl with the cauliflower and egg. Mix the ingredients 
  • Prep Your Pan and Oven. Preheat the oven to 450. Take out a baking sheet and put parchment paper on it. 
  • Prep the Cauliflower Slices. Use ½ of the cauliflower mixture to shape one slice of what will be used as bread and the other ½ of the cauliflower mixture for a second slice. Then sprinkle one teaspoon of Italian seasoning on the slices and add a dash of salt. Place the slices in the oven to cook for around 16 minutes.
  • Add Cheese Slices: Once you remove the cauliflower slices from the oven, place them on a plate. Add the cheese slices of your choice and then enjoy! If you want the cheese slices to melt more you can put the sandwich in the microwave for 15 seconds.

Notes:

You can use any type of cheese slices whether it be cheddar,  American or Swiss.

Instructions
