  • 2 tbsp olive oil
  • 1/2 onion sliced
  • 1 chopped garlic clove
  • 2 green chiles
  • 1 packet veggie sausages Gimme Lean veggie sausage
  • 1 cup crushed tomatoes
  • 1 can black beans
  • 1/2 tspn salt
  • 1/2 tspn pepper
  • 1/4 cup salsa for garnish
  • 1/3 cup cheese for garnish


  1. Turn the oven to 350.

  2. In a deep pan add oil on medium heat. 

  3. Add the onion and cook for 3-4 min.

  4. Add the garlic and the chiles. 

  5. Cut up the sausage and add it to the pan. 

  6. Add the tomatoes and beans. Stir. 

  7. Season with salt and pepper. Let sit for 5 minutes. 

  8. Then place the food into a pan and into the oven for 30 minutes. 

  9. Take out of the oven and place on a plate. Garnish with cheese and salsa. Enjoy!
