Indulge in the finer things in life with this vegetarian-friendly dish.
- 2 tbsp olive oil
- 1/2 onion (sliced)
- 1 chopped garlic clove
- 2 green chiles
- 1 packet veggie sausages (Gimme Lean veggie sausage )
- 1 cup crushed tomatoes
- 1 can black beans
- 1/2 tspn salt
- 1/2 tspn pepper
- 1/4 cup salsa (for garnish)
- 1/3 cup cheese (for garnish )
Turn the oven to 350.
In a deep pan add oil on medium heat.
Add the onion and cook for 3-4 min.
Add the garlic and the chiles.
Cut up the sausage and add it to the pan.
Add the tomatoes and beans. Stir.
Season with salt and pepper. Let sit for 5 minutes.
Then place the food into a pan and into the oven for 30 minutes.
Take out of the oven and place on a plate. Garnish with cheese and salsa. Enjoy!
