Low Calorie Creamy Tomato Soup
Delicious, low calorie and creamy!
- 1/4 cup chopped onions
- 1/2 cup water
- 1 cup diced tomatoes
- 1 tbsp cream cheese (low fat)
- 1 tsp olive oil
- 1 tsp basil (optional)
- 1 clove garlic (optional)
Heat oil in a small saucepan over medium heat; cook onion, stirring occasionally, until soft.
Combine onions, tomatoes, water, cream cheese and garlic in a blender; process until smooth.
Spoon tomato-mixture back into pan; simmer until heated through and garnish with basil.
