Mediterranean Quinoa Salad
A healthy, filling alternative to Pasta with your favorite Mediterranean flavors!
- 1 cup quinoa
- 3 tbsp pesto
- 1/2 cup red onion (chopped)
- 1/2 cup tomatoes (roasted)
- 1/2 cup peppers
- 1/2 tsp black pepper
- 1/2 cup feta cheese
Boil two cups of water and add in one cup of dry quinoa, cook according to package instructions. Set aside.
Chop up 1/2 cup of tomato and line on a foil covered pan, roast in the oven for about 30 minutes.
Add three tbsp of pesto and 1/2 tsp of black pepper to the quinoa. Mix.
Chop up 1/2 cup of onion and 1/2 cup of pepper, add to quinoa.
Add the roasted tomatoes to quinoa and 1/2 cup of feta cheese.
Mix all the ingredients together and enjoy!
