Quick and Delicious Summer Salad Recipe

The hotter the days get the more I crave light meals that will keep me cool and feeling full. Even though I virtually love all kinds of salad, I often find myself enjoying ones with a lot of crunch and a lot of fruit the best. Through trying different kinds of lettuce and salad combinations, I’ve come up with a go-to salad that’s perfect for a quick meal or as an option for your next barbecue. Hopefully you try it out, and post your recommendations or revisions below!

You’ll need:

– Sweet kale vegetable salad mix (This is available at a lot of grocery stores, but if you can’t find it, the bag includes broccoli, brussels sprouts, cabbage, kale, and chicory, all shredded)*

– Butter or boston lettuce, shredded

– Red grapes

– Pear, sliced thinly

– Berries of your choice (I usually use strawberries, blueberries, or raspberries depending on what I have)

– Goat cheese

– Dressing of your choice**


Combine salad mix, shredded lettuce, grapes, sliced pear, and berries in a bowl. Sprinkle on goat cheese and give the salad another quick toss. Drizzle dressing on top and enjoy!


*The kale salad mix also comes with poppyseed dressing and cranberries and seeds that I usually decide not to use.

** I have a Carter and Cavero store close to where I live that sells the most delicious pure dark chocolate balsamic vinegar. I usually top the salad with this; however, I understand not everyone has a store like this where they live. I’ve included a recipe for a balsamic vinaigrette in the book Eat to Live here, which I find is a great alternative to store bought balsamic vinaigrettes.
