St. Patrick’s Day Recipe: Green Velvet Cupcakes

I’ve always loved St. Patrick’s Day, because whether you’re Irish or not – there’s so much about it to love: green beer, lucky shamrocks, and corned beef and cabbage… yum. But if you’re not a fan of the typical Irish boiled dinner, then you’ll love these delicious green velvet shamrock cupcakes. Fun and festive, these cupcakes make the perfect St. Patty’s Day treat. To really celebrate the luck of the Irish, add chocolate gold coins, sugared rainbow ribbon candy, or even a sprig or two of clover atop your cupcakes. I personally, like decorating with green shamrock-shaped sprinkles as seen below. Have fun and happy baking!


– 2 1/2 cups all purpose flour
– 2 cups of sugar
– 2 eggs
– 1 tsp vanilla extract
– 1 tbsp cocoa
– 1 tbsp salt
– 1 tbsp baking soda
– 2 eggs
– 1 cup oil
– 1 cup buttermilk
– 1 tbs vinegar
– 1 tsp vanilla
– 1 oz green food coloring
– butter cream frosting
– shamrock sprinkles


  1. Pre-heat oven to 350 degrees F.
  2. Grease your cupcake pan
  3. In a medium sized bowl, whisk the eggs, one at a time. Slowly add wet ingredients, then dry ingredients, and mix both on medium-high. Once the mixture has been whisked into a thick green batter, let it settle.
  4. Fill the cupcake liners about halfway full.
  5. Bake about 10-15 minutes or until well formed (use the toothpick trick).
  6. Let the cupcakes cool completely before frosting with butter cream frosting.
  7. Decorate with shamrock sprinkles, green M&Ms, or candies!

* Makes about 12 cupcakes.
