Summer Chicken Salad Recipe

This Chicken Salad recipe is a classic take on a refreshing summer salad! It’s the perfect afternoon snack and is deliciously tasty!

This recipe was given to me by my grandma. Growing up, I’ve always loved this salad. It gives you all of the important nutrients to keep you healthy. Perfect for a summer day. The process of making this recipe is definitely worth the outcome. A great way to make leftovers to have in the fridge to bring for lunch. Feel free to make this recipe your own and add any additional ingredients or switch it up with what you might enjoy!

CHICKEN SALAD INGREDIENTS:

1 cup green grapes (cut in half)

1 TSP salt

2 TBSP lemon juice

1 cup mandarin oranges

2 cups diced cooked chicken

1 TBSP minced onion (or small pieces of onion)

1 cup chopped celery

3 cups cooked macaroni 

1 ½ cup slivered almonds

Dressing:

½ cup sugar

½ teaspoon of mustard

1 egg

½ cup vinegar

½ teaspoon cornstarch

HOW TO MAKE CHICKEN SALAD:

  1. Mix. Add the cooked chicken, salt, onion, and lemon juice in a bowl and refrigerate overnight.
  2. Next day. Add grapes, oranges, celery, cooked macaroni, and slivered almonds into the mixture.
  3. Prep the dressing. Mix all dry ingredients, add vinegar, mustard, and stir in the egg.
  4. Cook. In a double boiler, cook the dressing. Before adding in the dressing make sure it is a thin consistency, then cool.
  5. Add-in. Mix dressing with the rest of the mixture in the bowl.
  6. Serve cold. Serve cold and enjoy it!

Notes:

  1. Pasta options: Although this recipe calls for macaroni, you can choose other pasta shapes.
  2. Substitutions: You can add anything you like if you think that it might taste good in the salad like any form of nut (cashews, walnuts, pecans, almonds)
