Recipe: Farfalle with Sun-dried Tomatoes and Mozzarella

Insalata capreseWhether you’re having a couple friends over, cooking for your boyfriend or enjoying a night in alone, this pasta is perfectly simple and delicious Tomatoes and Mozzarella recipe.

Here’s what you need:

  • 1 box of farfalle pasta
  • 1 medium-size package of mozzarella cheese, cubed
  • 1 jar of sun-dried tomatoes (julienne cut preferred)
  • 3 tablespoons of basil, chopped
  • 1 tablespoon of garlic, minced
  • 2 tablespoons of extra-virgin olive oil
  • 1/2 of a lemon
  • salt and pepper to taste

Cook the pasta according to the directions on the box. When the pasta is done, add it to a large sautéing pan over medium-low heat. Add sun-dried tomatoes first and mix around.  Next add basil and garlic. After the pasta is thoroughly mixed, add the olive oil and distribute equally. Next squeeze the lemon on the pasta and mix. At this point, you can add salt and pepper to your liking. After that is finished, add the mozzarella. If you prefer the mozzarella really melted, keep mixing the pasta for another 10 minutes. If you prefer the cheese to retain some of its shape, only mix for 3 more minutes.
