2 Easy To Make Fresh Summer Salsas

Summer is a great time to keep your food light and fresh. Heavy foods during the heat can be unappetizing. Here are a couple of salsas that are perfect eats for the warm weather. They serve as great hors d’oeuvres at a dinner party or as a hearty snack to keep in your fridge. All you need to do is combine the ingredients in a bowl and refrigerate for about an hour to let it set. Serve with tortilla chips or put on top of chicken or fish.

 

Corn Salsa

  • 1 cup frozen yellow corn, frozen or fresh
  • 1 cup black beans
  • ½ cup red onion, chopped
  • 1 tablespoon jalapenos, minced
  • 1 tablespoon cilantro
  • ½ lime, squeezed
  • ½ cup diced red pepper
  • Salt and pepper to taste

Mango-Tomato Salsa

  • 1 mango, chopped
  • 1 medium-small tomato, chopped
  • ¼ cup red onion, chopped
  • 2 tablespoons cilantro
  • ½ lime, squeezed
  • Salt and pepper to taste
