Vegan Peanut Butter Chocolate Chip Cookies

Have you been craving cookies, but are feeling lazy about the effort? Well this recipe is the perfect solution for you. These cookies are quick and easy to make but taste like they took hours to perfect!

These are great as a quick pick me up after lunch or for a savory-sweet treat after dinner. Either way, they take a minimal amount of time to make and the reward at the end is amazing.

The cookies are super flavorful and gooey and somewhat of a healthier choice to your typical chocolate chip cookies. Cookie lovers everywhere will be obsessed with this recipe and have to try them again as they are. THAT. GOOD.

When I tell you that the entire plate of cookies was gone not even an hour after making them, I am not lying. My family loved these cookies and were quickly asking me when I was going to make them again. So rest assured if you are making these for your guests or friends they will be just as impressed with your baking talents.

VEGAN PEANUT BUTTER CHOCOLATE CHIP COOKIES INGREDIENTS:

1/2 Cup Gluten Free Flour:

As I said earlier, this recipe is gluten free and this flour is the perfect flour to use. I use cup 4 cup flour in so many baking recipes and you can seriously never tell that they are gluten free!

1/2 Cup Brown Sugar:

I used brown sugar in this recipe because it gives it the more well known chocolate chip cookie taste. If you wanted a more sugar cookie taste, you could go with white sugar.

1/2 Teaspoon Baking Powder:

As you know, baking powder helps the cookies get their shape and gives them a nice soft texture in the middle.

1/4 Teaspoon Salt:

 I used sea salt for this specific recipe, but you could also use regular salt as well. It’s just what I had in my kitchen and what I tend to prefer.

1/2 Cup Creamy Peanut Butter:

If you wanted a little extra crunch I think you could definitely go with crunchy peanut butter. In fact, in almost all cases I prefer crunchy, but in this case I wanted the only crunch in my cookies to be the chips. Therefore, I used creamy peanut butter.

1 banana:

This banana is the substitute for where you would normally see an egg used in cookies. However I think a banana actually makes the cookies taste better! And of course this is what makes this recipe vegan.

1/2 Teaspoon Vanilla extract:

You already know you have to add your vanilla. Vanilla extract is a staple in any bakers household.

4 Spoonfuls Dark Chocolate Chips:

As I explained before I love my dark chocolate. Although the brand Enjoy Life has dairy free semi-sweet chocolate chips as well if that’s up your ally. But definitely look out for Enjoy Life as a great dairy free chocolate.

HOW TO MAKE PEANUT BUTTER CHOCOLATE CHIP COOKIES:

1. Preheat the oven to 350 degrees.

2. Mix together the dry ingredients.

In a medium bowl mix together the flour, brown sugar, baking powder, and sea salt.

3. Mix in wet ingredients.

Mix in the peanut butter, then mash the banana in a small bowl, and mix in. Finally, add the vanilla.

4. Add the chocolate chips.

You can really add as many as you want, but I added around 4 spoonfuls.

5. Spray a baking tray and scoop out balls of dough onto the tray

Space them about an inch or two apart.

8. Cook in the oven at 350 degrees.

Cook for 10-12 minutes, depending on your oven. I would say start at 10 minutes and add more time if needed.

Cook Time 10 minutes
Total Time 20 minutes

Ingredients

  • 1/2 cup, cup 4 cup gluten free flour
  • 1/2 cup brown sugar
  • 1/2 tsp baking powder
  • 1/4 tsp sea salt
  • 1/2 cup peanut butter
  • 1 banana
  • 1/2 tsp vanilla extract
  • 4 spoonfuls of dairy free choco chips

Instructions

  1. Preheat the oven to 350 degrees.
  2. Mix the dry ingredients together in a medium bowl: the flour, brown sugar, baking powder, and sea salt.
  3. Mix in the wet ingredients: the peanut butter, the banana, and vanilla extract.
  4. Add in the chocolate chips.
  5. Spray a baking sheet and scoop out balls of dough onto the tray.
  6. Cook in the oven at 350 degrees for 10-12 minutes.
