Best Homemade Classic Coffee Cake

I absolutely love coffee. I’ll drink coffee hot, iced, even frozen! I know a lot of people will agree with me on the fact that coffee is a daily must-have. Lately ,I’ve been home a lot, forcing me to find new and creative ways to get my daily caffeine! I’m always on the lookout for new ways to make my coffee and I happen to love these At Home Lattes and Coffee Protein Shake recipes!

A while ago, I started experimenting with coffee-flavored desserts and found that I actually quite liked them! I’ve tried coffee ice cream (a must-try if you’ve never had it!) and chai cake (the cinnamon and cardamom flavor is amazing!), but I’ve never tried a classic coffee cake like this one!

This classic coffee cake has a beautiful swirl pattern on top that I think is one of the best things about it! Since the swirl design is just so pretty, I prefer to serve this cake without any frosting, but it would taste just as good with a nice coffee frosting. Ingredients Needed For Coffee Cake

This coffee cake uses relatively simple ingredients that you likely already have in your kitchen!

HOW TO MAKE COFFEE CAKE:

  1. Cream butter, sugar, and eggs together in a large mixing bowl. Add vanilla extract and mix well.
  2. Combine flour and baking powder together.
  3. Add the flour and baking powder mixture into the wet ingredients and mix until just combined. The batter may look more like cookie dough than cake batter, but that is okay!
  4. Mix about 1/2 tablespoon of instant coffee into the milk.
  5. Take about 4 tablespoons of the cake batter and place in a separate bowl.
  6. Pour the remaining batter into a circular pan.
  7. Add in the instant coffee to the 4 tablespoons of batter and mix it together with a spoon.
  8. Pour the coffee-imbued batter mixture into the middle of the pan and swirl using a knife/toothpick. Let any instant coffee liquid sink into the batter.
  9. Bake at 300 degrees for about 30 minutes, checking to see if it is baked frequently.

TIPS

This cake is wonderful because of the coffee flavor and subtle sweetness. However, if you’re looking for a sweeter taste, don’t hesitate to add more sugar when making this recipe. You can also enhance the coffee flavor further by adding more of the milk and instant coffee.

Another wonderful thing about this cake is that the beautiful swirl design on top means that it doesn’t require any frostings or ganache. But this doesn’t mean that frosting can’t be added! I imagine that this cake would taste even more amazing with a coffee frosting!

Ingredients

  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 and 1/2 cup flour
  • 1 and 3/4 teaspoon baking powder
  • 1/4 cup milk
  • 1/2 tablespoon instant coffee

Instructions

  2. Add in vanilla extract.
  3. Combine flour and baking powder together and add it into the wet ingredients. Mix until just combined.
  4. Mix instant coffee with milk.
