Black Bean and Corn Soup Recipe
After I went on the Kansas Corn trip I just couldn’t get enough of that tasty corn and still can’t. I made a delicious black bean and corn soup that I have been eating on repeat since I got home. There is nothing I love more than using a crockpot and having soup cooking through the chilly fall days. This soup was simple to make and great to eat. 🙂
Black Bean and Corn Soup
This delicious black bean and corn soup taste delicious and is only 150 calories per serving. Plus, using a crockpot you can get it ready in the morning and let it cook all day to done in time for dinner.
- 1 can corn
- 1 32oz box vegetable broth (your choice of broth type)
- 1 14.5 oz can tomato sauce (low sodium)
- 2 14.5 oz cans diced tomatoes with chiles
- 1 14.5 oz can black beans (low sodium)
- 1 lb ground beef (could use chicken or tofu)
- 1 medium onion (chopped)
- 1 packet taco seasoning

Chop onion

Cook Ground Beef

Drain Ground Beef

Mix all ingredients in the crockpot (any order)

Let cook 4-6 hours in crockpot
