Chai-Flavored Shortbread Cookies Recipe
These extremely easy chai shortbread cookies are so soft, falling apart in your mouth. Small and fluffy, you’ll find yourself eating multiple in one sitting!
Chai is one of my favorite drinks. It’s creamy, smooth, and can take on a spicy flavor or a richer vanilla one. I’ve been drinking it almost my entire life and it’s no surprise that I absolutely love other types of chai-flavored desserts! I’ve made chai cake before that had a crumbly, spicy taste and found this chai shortbread cookie recipe that is absolutely amazing!
This chai cookie is a shortbread, complete with a tender texture that melts in your mouth when you take a bite. Keeping with a typical shortbread recipe, this recipe calls for butter as the main ingredient. Add in the powdered sugar, flour, and spices and the batter will gradually shift from a crumbly, powdery batter to a buttery, traditional cookie dough.
These cookies are incredibly small and soft that you’ll find yourself eating a handful in one sitting! With this recipe, I made about 30 cookies, but the number of cookies produced depends on how big you want your cookies to be.
CHAI COOKIE INGREDIENTS:
- 16 ounces, or 2 sticks, of unsalted butter
- 1/2 cup of powdered sugar
- 1 and 1/3 cup of all-purpose flour
- Pinch of salt
- 3/4 teaspoon of cinnamon
- 1/2 teaspoon of cardamom
- 1/2 teaspoon of ground cloves
- 1/4 teaspoon of ground ginger
HOW TO MAKE CHAI SHORTBREAD COOKIES:
- Preheat oven to 350 degrees F.
- Cream butter and powdered sugar together in large bowl until smooth and fluffy.
- Add in flour and salt to the batter and cream until combined. It will be crumbly at first but it will start to come together.
- Add in the cinnamon, cardamom, cloves, and ginger and blend together until fully incorporated.
- Scoop out 1 tablespoon of batter and roll it into a ball. Place it onto a pre-prepared baking pan and flatten it to make a circle.
- Bake about 15-18 minutes at 350 F. Enjoy!
TIPS
These cookies are heavily dependent on the spices and ginger to bring out the chai flavor. However, if you’re running short on any of these ingredients, try substituting a tea bag instead. Add the contents of 1-2 black/chai tea bags to the batter and enjoy!

These incredibly easy chai shortbread cookies take less than 30 minutes to make, resulting in soft, fluffy cookies that melt in your mouth!
Ingredients
- 16 ounces of unsalted butter
- 1/2 cup of powdered sugar
- 1 and 3/4 cup of all-purpose flour
- Pinch of salt
- 3/4 teaspoon of cinnamon
- 1/2 teaspoon of cardamom
- 1/2 teaspoon of ground cloves
- 1/4 teaspoon of ground ginger
Instructions
- Preheat oven to 350 F and prepare baking pans for cookies.
- Cream butter and powdered sugar in a large bowl until light and fluffy.
- Add in flour and salt. Mix until it's smooth and doughy- it will take a few moments of mixing to reach this point.
- Add in the cinnamon, cardamom, ginger, and cloves and mix well.
- Roll about a 1 tablespoon of dough into a ball and place it onto the baking pans. Press it with your palm into a circular shape.
- Bake at 350 F for 15-18 minutes. Let cool and enjoy!
