I used to not be a breakfast eater, but this is the meal that changed that for me. It helped me become a meal-prepper and managed to tide me over until lunch. Every night before bed I’d prepare this recipe and put it in the fridge until morning to give it the thick consistency that I so desired. It’s the perfect meal for all ages. If you are trying to trick your kids into eating fruit it can easily be concealed amongst the milk of your choice and the chia seeds that are mixed together. If you are going for a more sophisticated styling of the recipe, I’ve found the most appealing staging is in a mason jar. However, a mug, glass, or bowl works as well.

It gives you enough time to share companionship without the occasional stress that can come with cooking. HOW TO MAKE CHIA SEED FRUIT PUDDING:

  1. Mix Chia Seeds and Milk of Choice. In either a mason jar, bowl, mug, or cup mix together the three tablespoons of chia seeds and one cup of milk, for this recipe, I chose almond milk. Wait around three minutes to let it settle. Then mix again to remove any clumps that may have formed.
  2. Add in Sweetener. Drizzle in ½ tablespoon of the sweetener you choose, for this recipe I used honey. After adding in the sweetener once again mix the ingredients together. 
  3. Add in Fruit. Add in the fruit of your choice. For this recipe, I used strawberries, blueberries, and raspberries. I put in about a handful of each, allowing some to float to the bottom. If you want your breakfast to look appealing you can decorate the surface of your pudding allowing some of the fruit to float on top. You can also decorate the rim of your cup by draping strawberries over it. 
  4. Store in Fridge. If you want a milky consistency you can prep this meal right before you eat it. However, if you want a thicker, more pudding-like consistency it’s best to store the meal overnight in the fridge or for a minimum of three hours before you desire to eat it.
