- 8 cups vegetable stock
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 3/4 cup poblano pepper, diced
- 4 cups fresh spinach or
- 2 tablespoons tomato paste
- 1 tablespoom cumin
- 1/2 tablespoon dried cilantro
- 1/2 tablespoon chili powder
- 1/2 cup sprouted brown rice (raised and drained) or prearled barley
- lemon slices to garnish (optional)
- 2 bay leaves
- 1 (15 oz) can Garbonzo beans, drained and rinsed
- 2 tablespoons chia seeds
- 1 tablespoon Aleppo chili
- 2 tablespoons soy sauce
Instructions
1. Heat the oil in a large pot over medium high heat.
2. Add the onion, carrots, celery, garlic, red and yellow peppers, poblano peppers, and corn.
3. Continue stirring on medium heat until onions are translucent and veggies are soft. Approximately 8-10 minutes string frequently.
4. Add in thyme, salt, pepper, chili powder, cumin, Aleppo chili, dried cilantro, tomato paste, and Paprika. Stir together with veggies in the pot for 4-5 minutes until fragrant.
5. Pour 1 cup serving size of stock. Deglaze the pot by scraping any brown bits off the bottom with a spatial. Then add the remaining stock and bring it to a boil.
6. Turn heat to medium-low heat and add rice, chai seeds, soy sauce, garbanzo beans, and bay leaves. Mix soup together then cover and simmer for 1 hour.
7. Uncover soup, stir and simmer for 15 more minutes. Stir in spinach and wait about 1-minutes then turn off the heat.
8. Garnish with a lemon wheel or add some freshly squeezed lime juice and serve with bread! The lemon zest adds freshness and extra flavor!
