Every bite brings with it a memory of a different Modern Family episode. The array of ingredients culminates in a breakfast sandwich you can never get enough of.

Ingredients

  • Bread: Any type of bread works. In the traditional recipe sourdough bread is used. (However, I use a whole wheat baguette).
  • Mayonnaise: Any type of mayo can be used whether regular or light. (I used Hellman’s Real Mayonaise).
  • Eggs: I used one organic egg but any type of egg can be used and you can use more than one.
  • Greens: You can use lettuce, arugula, spinach or anything else you have at home. (I used arugula).
  • Cheese: You can use any type of cheese you like but I’ve found it tastes best with cheddar cheese.

Instructions

    1. Prep Baguette. Cut the portion of the baguette that you want for your sandwich. Also, make sure to cut it in half. Next put it in the toaster. For me, part of my baguette always sticks out so I set the toaster to the number three and I put each half in twice alternating the side getting cooked.
    2. Cook Egg. While the baguette is toasting, turn the stove on to medium heat and crack your egg on the pan while trying not to have it spread out too far. Cook until the egg white has become firm but the yolk is still runny for an over-easy egg.
    3. Put it all together. When your baguette is done toasting, put mayo on each half. Then take three slices of cheese and cut them in half. Place three halves on each side of the baguette. Add arugula. Then place the egg on last and close the sandwich.

This is a vegetarian meal. You can use any bread you like as well as any cheese preference. You can also change how you cook your egg based on your liking.
