Dairy-Free Pizza Stuffed Mini Peppers

Looking for a healthier alternative to pizza? This recipe is a perfect appetizer and is a great party food idea! This recipe is also dairy-free!

Pizza has always been one of my favorite foods to eat, but it tends to make me feel bloated and gross afterward because of all the dairy and oil. I wanted to see what I could make to replace the “not so healthy” version of pizza! This recipe is comprised of sweet mini peppers, pizza sauce, dairy-free mozzarella cheese, and pepperoni!

I love sweet mini peppers because of the crunch and taste! This recipe could be super fun for the family by mixing different toppings! If you are trying this because it is healthy but you don’t like the taste of peppers, no worries! You can add a bunch of different toppings and put a heap of pizza sauce in it to make sure you only taste the crunch! This appetizer is perfect to serve at parties and events too!

This recipe is just the plain and simple pepperoni pizza but be sure to combine different toppings such as bacon, olives, mushrooms, spinach, or onion! I made sure to cut my pepperoni and cheese pieces into small pieces so they were able to fit in the mini pepper!

How To Make Pizza Stuffed Mini Peppers:

  • Preheat the oven to 375 degrees
  • Prepare ingredients: Chop the mini peppers in half and take out the seeds. Next, cut the pepperoni and mozzarella cheese into small pieces.
  • Add ingredients into peppers: Put enough pizza sauce to fill the pepper. Then, sprinkle the cheese and pepperoni on, enough to top the pepper.
  • Oil and place peppers in the pan: I like to cover the pan in a little bit of olive oil so they don’t stick. You can also use parchment paper to keep from sticking or spilling.
  • Put the peppers in for 10 minutes: Depending on how crunchy you want your peppers to be will determine the time. I kept them in for around 10 minutes and they were still super crunchy! Also, the cheese had cooked enough and melted in 10 minutes too!

NOTES:

If you want your peppers to be soft, you can keep it in the oven for 10-15 minutes longer. I like keeping them crunchy so I only keep them in there for about 10 minutes. If you want to fit more toppings in the pepper, make sure to carve out as much of the insides as you can.

Ingredients

  • Mini Sweet Peppers: I used 6 peppers which accounted for 12 "pizzas"
  • Pizza sauce: I used about a spoonful per pizza pepper
  • Pepperoni: I cut my pepperoni into smaller pieces and used about 10-15 chopped up pieces. You can also use mini pepperoni and save yourself some time!
  • Dairy-free mozzarella cheese: I cut these into mini pieces too and used just enough to cover the top! This is a dairy-free recipe but you can easily still use regular mozzarella cheese!
