Delicious Black Bean Burritos
These burritos are perfect for satisfying that craving for Mexican food, so much so that you’ll want to have them every night!
This recipe is a quick and easy way to make delicious burritos to feel like you are in an authentic restaurant right in your home. Feel free to make as many servings and double the batch if you want as it can make for the perfect leftovers.
Black Bean Burritos Ingredients:
- 2 (10 inch) flour tortillas
- 1 teaspoon minced garlic
- 2 tablespoons vegetable oil
- 1/2 red bell pepper, chopped
- 1 small onion, chopped
- 3 ounces cream cheese
- 1 teaspoon minced jalapeno peppers
- 1 (15 ounce) can black beans, rinsed and drained
- 1/2 teaspoon salt
- 2 tablespoons chopped fresh cilantro
HOW TO MAKE BLACK BEAN BURRITOS:
- Bake. Wrap tortillas in foil and place in oven heated to 350 degrees. Bake for 15 minutes or until heated through.
- Cook ingredients. Heat oil in a 10-inch skillet over medium heat. Place onion, bell pepper, garlic, and jalapenos in skillet, cook for 2 minutes stirring occasionally. Pour beans into skillet, cook for 3 minutes while stirring.
- Add-in. Cut cream cheese into smaller pieces and add to skillet with salt. Cook for 2 minutes stirring occasionally. Stir cilantro into mixture.
- Serve immediately. Spoon mixture evenly down center of warmed tortilla and roll tortillas up to create a burrito. Serve immediately after cooking.
Notes:
You may also use a slow cooker for an easier cleanup but it might take a little longer to cook compared to making it in a skillet. This dish serves great with a side of Guacamole or Sour Cream!
