Easy & Super Soft Lemon Cookies Recipe
If you love lemon and soft cookies, then this recipe is perfect for you. I adore lemon flavored everything, especially berry lemonade cocktails. So, I came up with this cookie recipe that has a strong kick of lemon! It’ll make your lips pucker in the best way possible. I’ve made it for many family gatherings and they’re always gone at the end of the party.

Soft Lemon Cookies Ingredients:
- 1 cup of unsalted butter
- 1/2 cups of brown sugar
- 1 – 1/2 cups of sugar
- 2 eggs
- 3 teaspoons of grated lemon zest (2 lemons zested)
- 4 tablespoons of lemon juice (2 lemons juiced)
- 3 and 1/8 cups of flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 teaspoon cream of tartar
- 5 teaspoons of sugar
Instructions:
1. Preheat oven to 350 degrees. Then, get out a baking sheet and cover it with parchment paper.
2. Combine the sugar, brown sugar, and butter. Make sure the butter is soft before adding it to the mixture. Once thoroughly combined, zest two lemons. Then, juice the two lemons. Add the zest and juice to the bowl. If you prefer the lemon cookies to be even more lemony, zest and juice another lemon and add it to the mixture. Lastly, beat in the eggs.
3. In a separate bowl, combine the dry ingredients. Stir together the baking soda, flour, salt, and the cream of tartar. Then, combine it with the other mixture. Mix it until it’s all creamed together.
4. Use an ice cream scoop to measure out the balls of dough. Make sure to spread them out on the parchment, about three rows of three. The lemon cookies will expand in the oven, so you don’t want them melding together.
5. Water the bottom of a measuring cup or glass, and dip it in sugar. Flatten each lemon cookie dough, so it’s coated with sugar. Mix lemon zest into the sugar coating if you want it to be extra lemony.
6. Bake the lemon cookies for 13-15 minutes, until the edges are just a bit brown. Take them out and enjoy!
