For this recipe, I am precooking the cauliflower. I take this step to speed up the recipe to make my mornings run that much smoother on a busy day. Furthermore, by cooking the cauliflower ahead of time you can better mix the other ingredients and make the dough smooth.

This way you can get the perfect result – golden, delicious, delicate, cauliflower pancakes. Like all fried foods, there’s something crispy and addictive about them, but this healthy substitution will fix your craving and keep you on track with your keto diet.

How to season these cauliflower pancakes?

I simply season these cauliflower pancakes with salt, pepper, and powdered garlic. You can certainly add more seasonings if you want. Another suggestion would be to add 1/2 teaspoon of onion powder and 1/2 teaspoon of dried thyme. I think both would complete this dish well.

What to serve with them?

You can serve them for breakfast to get your day started off right. You can also make a large batch and keep them in the fridge for fast and easy breakfast. These pancakes keep well in the fridge, in a sealed container, for about 3-4 days. They taste just as great when gently reheated in the microwave.

Another option would be to serve these cauliflower pancakes with a couple of fried eggs and a salad for a delicious dinner. I often serve them with baked chicken legs. They are delicious when seasoned with a spoonful of sour cream.

I don’t fry these cauliflower pancakes, but I prefer to use a large non-stick pan to cook my pancakes. However, if you want to fry the cauliflower pancakes you can do it in olive oil.
