Funfetti Pancake Cookies Recipe

I am so excited for National Pancake day on March 5th! Pancakes are always such a fun, delicious treat. They remind me of Saturday mornings with my family when I was growing up. We would always get to pick our favorite toppings and even mix them in. While I love a good traditional pancake I decided to try something new.

In honor of the holiday I thought I’d get creative with pancakes and tried a new recipe. I made funfetti pancake cookies. These are a perfect treat and especially a fun idea for birthdays!!

It only took a few ingredients and at the base of it I used Krusteaz’s buttermilk protein pancake mix. It is a healthy delicious alternative that only require one things, water! Krusteaz’s protein pancake mix has 15 grams of protein and better-for-you nutrients while still keeping that fluffy buttery taste. This way you don’t have to pick between health or a tasty pancake cookie.

These pancake cookies will allow you to celebrate national pancake day throughout the day instead of just in the morning. Pancake cookies are perfect for sharing or making with friends. You won’t have to worry about sticky syrup or dripping pancake mix everywhere. Plus the clean up is easier!

Ingredients

Pancake cookies are super easy to make with Krusteaz’s protein mix just follow the direction on the back or the recipe below. You can decide whether or not to double the recipe like I did and the amount of funfetti sprinkles.

Firecracker Marshmallow Bites

Ingredients

  • Marshmallows
  • White Chocolate Almond Bark
  • Sprinkles
  • Black Licorice Twizzlers

Instructions

1. Melt white chocolate almond bark.

Start by melting the white chocolate almond bark in a small bowl according to the packaging instructions.

Once melted, set it aside for later use.

2. Cut black licorice Twizzlers into 1-inch pieces.

Take the black licorice Twizzlers and cut them into 1-inch pieces.

These will serve as the "fuses" for our firecracker bites.

Set them aside for now.

3. Choose your sprinkles and empty them into a small bowl.

In a separate small bowl, select your desired sprinkles.

You can choose a variety of colors to add a festive touch to your marshmallow bites.

4. Assemble using a toothpick.

Now it's time to assemble our firecracker marshmallow bites!

Take a toothpick and skewer one marshmallow onto it.

Ensure that the marshmallow is secured firmly on the toothpick.

5. Cover the marshmallow in white chocolate.

Dip the marshmallow into the melted white chocolate almond bark, ensuring that it is evenly coated on all sides.

The white chocolate coating will serve as the outer layer of our firecracker bites.

6. Cover marshmallow in sprinkles

Once coated with white chocolate, carefully roll the marshmallow in the bowl of sprinkles, making sure it is fully covered from all angles.

Gently rotate the marshmallow to achieve an even coating of colorful sprinkles.

7. Place on wax paper lined tray and repeat.

Place the coated marshmallow on a tray lined with wax paper.

Repeat the process for the remaining marshmallows.

8. Remove toothpick and replace with Twizzler.

Now comes the fun part!

Remove the toothpick from each marshmallow and replace it with one of the 1-inch Twizzler pieces.

This will give the appearance of a fuse, adding to the firecracker theme.

9. Let the marshmallow bites set.

Allow the marshmallow bites to sit for a few minutes to allow the white chocolate to harden and set.

This will ensure a delightful and firm texture.

10. Enjoy!

    I do have one question (sorry if you covered this in the text…I only watched the video didn’t bother to read! 😬)…anywho..my question is about the brand pancake mix you used. Do you think your recipe would work with any brand or specifically that one?

    I ask because I have a box of Cap’n Crunch crunch berries flavored pancake mix and I want to use it for cookies. It just sits in my pantry staring at me (Not a huge fan of the flavor for my pancakes) and I hate to waste it.

    1. @Jojo, they are protein cookies. I have the captain crunch mix too. But it doesn’t have protein. You could add protein powder vanilla to it to get the protein. 2 scoops.
