Instructions
Preparation
This recipe takes a bit of preparation to truly make a great treat! I recommend doing this process earlier in the day to allow for enough time.
First is to make the dough and let it rise twice before baking!
1. Proof the yeast:
- In a small bowl, combine the warm milk and a pinch of sugar.
- Sprinkle the yeast over the warm milk and let it sit for about 5-10 minutes until it becomes frothy.
2. Make the dough:
- In a large mixing bowl, combine the activated yeast mixture, sugar, melted butter, and eggs.
- Gradually add in the flour and salt while mixing until a soft dough forms.
- Knead the dough on a lightly floured surface for about 5 minutes until it becomes smooth and elastic.
3. First rise:
- Place the dough in a greased bowl, cover it with a damp cloth or plastic wrap, and let it rise in a warm, draft-free place for about 1-1.5 hours, or until it has doubled in size.
4. Roll and cut:
- Roll out the dough on a floured surface to about 1/2-inch thickness.
- Use a donut cutter or a round cookie cutter to cut out donuts. You can also use the mouth of a glass if you don’t have a cutter.
5. Second rise:
- Place the cut donuts on a baking sheet lined with parchment paper.
- Cover them with a clean kitchen towel and let them rise for another 30 minutes to an hour until they puff up a bit.
Baking
Now that the dough has risen, it is time to bake the donuts and make the glaze!
1. Heat the oil:
- In a deep, heavy-bottomed pot, heat the vegetable oil to 350-375°F (175-190°C). You’ll need enough oil to submerge the donuts.
2. Fry the donuts:
- Carefully add the donuts to the hot oil, a few at a time, avoiding overcrowding.
- Fry each side for 1-2 minutes or until they are golden brown.
- Use a slotted spoon or tongs to remove the donuts and place them on a paper towel-lined plate to drain any excess oil.
3. Make the glaze:
- In a bowl, whisk together the powdered sugar, milk, and vanilla extract until you have a smooth glaze.
- Separate the glaze into as many bowls as needed and place a few drops of food coloring in each
4. Glaze the donuts:
- While the donuts are still warm, dip the donuts into the desired glaze about ¾ of the way in to coat them evenly.
- Place them on a wire rack to allow any excess glaze to drip off.
Decorating and Serving
Once the icing has cooled on the donut you can begin decorating your monsters!
- Using a small tip piping bag, choose an icing of your preference (we used black and white) to create drizzles on different parts of the donut
- Add any extra toppings you want, like sprinkles
- Place two little dots of icing above the hole in the donut to help the candy eyeballs stick. You can also put a dab on the back of the eyes to ensure that they will stick.
- Carefully place two eyeballs over the dot of icing and voila! Your Halloween Monster Donuts are complete.
Variations of the Halloween donut
If vibrant colored monsters aren’t your thing, below I have added a few variations you can make to create your own monsters!
Mummy Donuts
To make mummy donuts, dip it in white glaze without any color. Allow them to cool and drizzle some white chocolate over the top to create a mummy like texture.
Add the eyes like above and there you have it, a mummy donut.
Vampire Donuts
If you have any extra plastic vampire teeth laying around than its a perfect time to make a vampire donut.
Just simply follow the same directions for the eyes as above and stick the vampire fangs into the donut hole
