Halloween Mummy Brownies Recipe
These mummy Halloween brownies serve 24 monsters with one batch, and take less than an hour to make!
Ingredients
Brownie Batter
- 1 cup butter, melted
- 2 1/2 cups sugar
- 1 tbsp vanilla extract
- 4 eggs
- 1 1/2 cups whole wheat or all-purpose flour
- 1 cup unsweetened cocoa
- 1/2 tsp salt
- optional: chocolate chips for topping or mix-in
White Chocolate Cream Cheese Frosting
- 2/3 cup white chocolate chips or white chocolate, chopped
- 1/2 cup butter, cold
- 2/3 cup cream cheese, cold
- 1 teaspoon vanilla bean paste (preferred) or vanilla extract
- candy eyes, to add later
Instructions
Preparation
- Preheat oven to 350 F.
- In a large bowl, combine melted butter, sugar, and 1 tbsp vanilla with a whisk until smooth.
- Whisk in eggs, one at a time, beating well after each addition.
- Stir in flour, cocoa, and salt until combined.
- Line a large brownie pan with tin foil or parchment paper, and spray with non-stick spray. Spread batter in prepared pan.
Cooking
- Place brownies in oven. Bake brownies at least 25 mins.
- While the brownies are baking, melt the white chocolate chips in a microwave-safe bowl in the microwave.
- Start with 30 seconds, then give the chocolate chips a quick mix.
- Return to the microwave for a smaller interval of 15 seconds, mixing after each time. Repeat until you melt white chocolate chips completely, then let cool to room temperature.
- In a medium bowl, beat the cold butter until pale and fluffy. If needed, add 1 small drop of purple food colouring to make it less yellow.
- Add the cooled melted chocolate, cream cheese, and vanilla bean paste to the butter. Mix everything until combined.
- Check brownies at 25 minutes, continuing to bake up to 35 minutes or until the outer 3 inches are set.
Serving
- Allow brownies to cool completely as you spoon the frosting into a piping bag.
- Though you can freehand it, I recommend a piping tip #47 or #48, though any from #44-48 will make great mummy bandages.
- Once brownies are done cooling, cut brownies into 12-24 rectangles. Remove brownies onto a platter or tray for decorating.
- Pipe frosting over brownies; use a zigzag motion for mummy wrapping on top of the brownies.
- For mummy eyes, decorate the brownies with white chocolate chips or white candy eyeballs.
- Serve the cooled brownies on a favorite Halloween platter or in individual resealable cellophane bags.
Tips & Variations
- Cut the brownies into fun mummy shapes with a cookie cutter or two for extra Halloween fun.
- To up the ghoulish delight of this spooky treat, replace the cocoa powder with red Dutch cocoa powder for fudgy chocolate mummy taste with an eerie bloody hue.
- The brownies do not need to be totally set when removed from oven, as they will continue to cook in the pan.
- If you like them gooier, take them out on the earlier side. If you want them fully baked, wait until a toothpick comes out mostly clean.
