  • 1 cup tapioca flour
  • 2/3 cup arrowroot flour
  • 2 tbsp olive oil
  • 2 large eggs
  • 4 egg yolks
  • 2 tbsp sea salt

Making Dough

1. Add water to a large pot and bring to a boil on medium heat. Add tbsp olive oil to water.

2. Blend all your dry ingredients in a food processor for about 20 seconds. Then place in a large mixing bowl and mix well in the center.

3. Add your eggs and egg yolk into a bowl and whisk with a fork. Start pulling the dry mixture In with a fork and combine it with the egg until it’s partially combined.

4. Using your cutting board or a flat surface lightly dust with arrowroot flour. Add dough and knead for about 5 minutes until smooth. If the dough is too wet add tbsp of almond flour.

5. Divide pasta dough into 4 balls and use one at a time to roll with the rolling pin or through a pasta maker.

Make sure to keep the ball of dough wrapped with plastic wrap or covered until ready to use or it will dry out at room temperature.

6. Gently roll out raw dough with a rolling pin until the dough has reached your desired shape and thickness. If using a pasta machine run the dough through once on setting 0 or 1.

7. To cut pasta take a sharp knife for the desired shape. For a pasta machine run the dough through the cutter. Repeat the rolling and cutting process with the remaining dough.

8. Place cut noodles into a large pot of water. Do so in batches to prevent them from sticking to one another.

Cook for about 2-3 minutes until al dente and drain. Use a wooden spoon to stir and prevent sticking. You can get rid of the excess water.

9. Add your favorite tomato sauce and favorite things on top and enjoy!

Add in xanthan gum to help the egg noodles stick together.
