Ingredients

  • 1 large egg
  • 1 cup reduced-sugar creamy peanut butter
  • 1/2 cup granular erythritol
  • 2 teaspoons pure vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon sea salt

Instructions

  1. Preheat over to 350°F and cover your baking sheet in parchment paper.
  2. Add all the ingredients together in a large mixing bowl. You can use a hand mixer or mix my hand till the ingredients are well combined and the dough is thick.
  3. Roll the dough into about 12 balls or equal size. They should be about 1 to 1½ inch balls. Place them onto the cookie sheet about 2 inches apart.
  4. Use a fork to flatten the cookies with crisscross marks on the top.
  5. Bake for 10 minutes. The cookies should have firm edges but the centers still soft.
  6. Remove the cookies from the oven and let cool before eating.

Notes

You can store your cookies in an airtight container for up to 2 weeks.
