Then I learned the correct way to cook them and my viewpoint completely changed. If you cover them with the right amount of seasoning and then cook them long enough to get a crispy char, you are GOLDEN.

What makes brussel sprouts one of the best sides is that they pair beautifully with a multitude of entrees and side dishes. They are so versatile! You can even add them to dishes like pasta or pizza to get an added health kick. Brussels are low in calories, high in nutrients and are vegetarian, Keto and gluten-free friendly.

Low Carb Parmesan Brussel Sprouts

Directions:

  1. Rinse off brussel sprouts with water. Trim off the ends and halve them lengthwise with a sharp knife.
  2. Preheat oven to 425 degrees F. Lightly grease a baking sheet with cooking spray.
  3. Spread the sprouts in an even layer on the baking sheet and drizzle with olive oil. Stir to thoroughly coat.
  4. Sprinkle with both Parmesan and Romano cheese and stir the mixture together to combine.
  5. Bake for 15-18 minutes until they are golden brown and crispy on the edges. Serve immediately.

  • 1/2 cup Parmesan cheese, finely shredded
  • 1/4 cup grated Romano cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper
