Mediterranean Quinoa Salad

A healthy, filling alternative to Pasta with your favorite Mediterranean flavors! 

  • 1 cup quinoa
  • 3 tbsp pesto
  • 1/2 cup red onion (chopped)
  • 1/2 cup tomatoes (roasted)
  • 1/2 cup peppers
  • 1/2 tsp black pepper
  • 1/2 cup feta cheese
  1. Boil two cups of water and add in one cup of dry quinoa, cook according to package instructions. Set aside.

  2. Chop up 1/2 cup of tomato and line on a foil covered pan, roast in the oven for about 30 minutes.

  3. Add three tbsp of pesto and 1/2 tsp of black pepper to the quinoa. Mix.

  4. Chop up 1/2 cup of onion and 1/2 cup of pepper, add to quinoa. 

  5. Add the roasted tomatoes to quinoa and 1/2 cup of feta cheese.

  6. Mix all the ingredients together and enjoy!
