Mediterranean Quinoa Salad
A healthy, filling alternative to Pasta with your favorite Mediterranean flavors!
- 1 cup quinoa
- 3 tablespoon pesto
- ½ cup red onion (chopped)
- ½ cup tomatoes (roasted)
- ½ cup peppers
- ½ teaspoon black pepper
- ½ cup feta cheese

Boil two cups of water and add in one cup of dry quinoa, cook according to package instructions. Set aside.

Chop up ½ cup of tomato and line on a foil covered pan, roast in the oven for about 30 minutes.

Add three tablespoon of pesto and ½ teaspoon of black pepper to the quinoa. Mix.

Chop up ½ cup of onion and ½ cup of pepper, add to quinoa.

Add the roasted tomatoes to quinoa and ½ cup of feta cheese.

Mix all the ingredients together and enjoy!
