Mini Fruit Pizzas are a perfect mini dessert to enjoy all around the year. It can be served in the spring at graduation parties, and can even be appreciated on hor oeuvres plates on New Year’s Eve. This fruity treat can complement any drink and makes an excellent dessert to any entree.

The bright and vibrant colors of the fruit make this dish exciting for everyone to enjoy. This colorful and creative dessert is both easy and fun for adults and kids to make.

This three-layer cookie is really a way to express food creativity. Any brand of sugar cookie can be used, any brand of cream cheese can be spread on top, and any fruits can be used to top it off.

I made these Mini Fruit Pizza Sugar Cookie’s with my four year old brother, so anyone can make them! The two of us wanted to make a fun dessert for our whole family to enjoy.

The most exciting part of the preparation of these cookies is picking out the fruits because the cookies are so customizable and taste delicious with any fruit you put on top!

The best part about these cookies is how quick they are to whip up. This recipe requires no special tools and no refrigeration time!

1. Sugar Cookies. You can make these from scratch or use store-bought, frozen or pre-made.

2. Cream Cheese. You can use any flavor you like. I usually stick with plain but sometimes mix it up with strawberry.

3. Cool Whip. You will want the kind in the tub as it is thicker than the can. You can mix it in a medium bowl for texture. You can also use an electric mixer for stirring.

3. Fresh Fruit. Pick any fruit you like for your toppings. I recommend strawberries and mandarin oranges as my favorite fruit toppings.

HOW TO MAKE YOUR MINI FRUIT PIZZA:

1. Make the Sugar Cookie. I purchased some pre-made sugar cookie dough at my local grocery store. This cut the prep time in half. I spread apart the cookies on a cookie sheet and bake the cookies.

You can also use dry ingredients to make your favorite sugar cookie recipe and mix together then use a round cookie cutter for shape. Also, try premade shortbread cookies.

2. Cut Fruit. While the cookies are baking in the oven I cut up the fruit I chose for the top of the cookie. For my cookies I chose pineapple and strawberries, but on your cookies, you can do any fruit that compliments the cookie and cream cheese!

3. Take Sugar Cookies out of the Oven. The pre-packaged cookies told me how long to let the cookies cook and cool. They make a great soft sugar cookie crust. After I let them cool on the cookie sheet, I scooped them off put them on a plate to decorate.

4. Mix cool whip and block of cream cheese. This will make a fluffy icing layer. You can do half and half or pick your favorite and do a little extra. I use medium speed for mixing to create the cream cheese spread.

4. Apply the Mixture. On top of every single cookie, I put a layer of cream cheese and cool whip. For a lighter version use less of the spread on the cookies.

5. Decorate with Fruit, This is the most fun part and a lot of different ways! On each cookie, I put a little bit of the fruit on each cookie, so that with each bite I could get a taste of each of my favorite fruits.

If you are having a party set up a mini fruit pizza bar for guest to add their own toppings. These are always a huge hit at summer parties and a family gathering.

6. Enjoy! You can eat as is or top with powdered sugar.

DIET FRIENDLY SUBSTITUTIONS

If you wanted to make this recipe more diet-friendly, you could always substitute the cream cheese out for cool whip or even a low sugar whipped cream, whereas; a tasty cookie supplement could be a rice cake.
