These pumpkin spice blondies are chewy, delicious, and the perfect fall festive treat!
- 1 cup brown sugar
- 1 cup sugar
- 1 cup unsalted butter (softened )
- 1 egg yolk
- 2 teaspoon vanilla extract
- 2 ¾ cup flour
- 2 teaspoon pumpkin spice
- ¾ teaspoon salt
- ¼ teaspoon baking powder
- 1 teaspoon cinnamon
- 1 tbs sugar (for topping)
- 1 tbs brown sugar (for topping )
- ½ teaspoon cinnamon (for topping )

Mix together sugars and butter using an electric mixer.

Once evenly combined, add egg yolk and vanilla extract.

In a separate bowl, mix together flour, cinnamon, pumpkin spice, salt, and baking powder.

Slowly add dry ingredients to the electric mixer. Mix on low speed at first and gradually increase speed.

Add pumpkin chips.

Mix until all ingredients are completely combined.

Spread batter evenly into a 13x9 baking pan. (don’t forget to spray it with baking spray before!)

In a small bowl, mix together white sugar, brown sugar, and cinnamon. Sprinkle on top of the dough.

Bake for 25 minutes at 350F.
