Rice and Eggs Recipe

This Rice and Eggs Recipe is a simple spin on fried rice. It can be cooked in under 10 minutes. The rice is even microwavable, to further facilitate the process.

The best recipes are often stumbled upon, as is the case with this one. Not only does it retain flavor but it is accompanied by great ease, requiring very few steps. It is similar to fried rice, however, this version is modified to be simpler. Thus, it is stripped of the vegetables and protein options you’d typically find. However, one thing this recipe isn’t stripped of is its flavor. It requires only three ingredients, and they can be cooked simultaneously.

The rice can be microwaved or cooked on the stovetop in a separate pan from the eggs, or in the same pan as them. At the end of the recipe, they’ll be combined together. Thus, cooking the eggs and rice in the same pan alleviates the number of dishes you’ll have to clean. However, to begin with, this meal is hassle-free and will take a maximum of ten minutes to cook.

This recipe is great for weight loss. While it may not contain protein in the meat and seafood departments, the eggs contribute protein and health to the meal. Moreover, the rice contains carbohydrates. The combination of the two, eggs and rice, makes for a great pre or post-workout meal, providing fuel for your body by filling it with all the nutritious elements you need. If you want to make the recipe even healthier there are alternative options you can pursue. Instead of brown rice, you can use cauliflower rice. You can also use just the egg whites instead of the full egg. However, the meal is healthy to begin with and its original structure is tasteful as well.

If you are looking to further the meal you can add in more protein such as steak, chicken, shrimp, or fish. For vegetarians just the eggs and rice are ideal. But it can be altered to fit the diet of pescatarians or meat-eaters. The meal is one you won’t regret trying, rather, you’ll wonder how you haven’t had it sooner. It manages to have a short preparation and cook time while maintaining the appearance, quality, and taste of something you’d get in a restaurant. This recipe is the perfect way to welcome yourself and others home. Whether cooking for a family or one, the serving sizes are extremely adjustable. While using the boxed rice from Trader Joe’s is great because the portions are already allotted you can also use boxed rice and use around 1-1 ½ cups for every two eggs. 

Rice and Eggs Ingredients:

First, let’s chat ingredients…

  • Brown Rice: Brown rice brings the most complimentary flavors with this recipe but white rice can be used as well.  (I used ½ a bag of boxed brown rice from Trader Joe’s which is found in the frozen section).
  • Eggs. Use two eggs.
  • Soy Sauce. Use four tablespoons of soy sauce. More can be used if needed.

How to Make Rice and Eggs:

  • Cook the Rice. Cook the rice either on the stovetop or microwave. If you are using Trader Joe’s brown rice then use half the bag and place it in the microwave for three minutes. If you are using the stovetop, turn it on to low heat then place half the bag of rice in the pan. 
  • Cook the Eggs. Immediately after you place the rice on the pan crack open the two eggs over the pan. Then mix the eggs and rice together. Once they have been mixed you can turn the stove to medium heat. If you microwave the rice then while it’s cooking in the microwave add the eggs to the pan on low heat and slowly increase it until medium heat. Once you see the eggs start to take form and seem scrambled turn the stove off and transfer the rice and eggs to a bowl. They should cook on the pan for 5-10 minutes. It is important that the pan is on low heat for the first few minutes so nothing burns or sticks. 
  • Add in Soy Sauce. Then add in around four tablespoons of soy sauce. You can add in more if needed. Make sure to mix all the ingredients together so the soy sauce is equally spread.

Notes:

White rice and cauliflower rice can be used as an alternative to brown rice. You can also add in steak, chicken, shrimp, or fish for additional protein.
