Spice Up Your Life with this Tempeh Peanut Sauce

Spicy, savory, and healthy. What more could you want? 

  • 1 package Tempeh (Lightlife)
  • 1 tbsp vegetable oil
  • 3 tbsp light soy sauce
  • 2 tbsp rice wine
  • 2 tbsp rice vinegar
  • 1 1/2 tbsp sesame oil
  • 1 tsp ginger
  • 1/2 cup water
  • 1/4 cup organic peanut butter
  • 1/4 cup Asian sweet chili sauce
  • 4 cups noodles (of your choice)
  1. Boil the tempeh for 10 minutes over medium heat. 

  2. Grab a large skillet on medium heat and add the oil. 

  3. Whisk the 2 tablespoons of soy sauce, mirin, rice vinegar, 1 1/2 teaspoons of sesame oil and ginger. 

  4. Pour over the tempeh and put on low heat until the tempeh feels dry. 

  5. In a saucepan, heat peanut butter, 1 tablespoon of soy sauce and 1 tablespoon of sesame oil, water, and chili sauce on medium heat. Stir occasionally until warm. 

  6. Plate the noodles and place the sauce over the noodles, enjoy!
