Strawberry Oatmeal Bars Recipe

These delicious bars are a great snack to make for a nice sweet treat! This recipe is dairy-free and still tastes as delicious!

These Strawberry Oatmeal Bars are a healthy dessert for your cravings! I love granola bars and wanted to try to make some of my own! These bars can be perfect for breakfast or as a snack! These are very easy to make and I personally make them dairy-free. Instead of regular butter or milk, I use plant-based butter and soy milk and still tastes equally delicious!

If you want to make this a full dessert, these bars would be perfect to top off with some ice cream! Once you take these out of the oven, they will smell heavenly! It will take around 30-40 minutes to bake the bars, depending on what ingredients you will use.

Instead of rolled oats, I used instant oats and it worked perfectly fine! The butter that I used was a plant-based olive oil butter so it was a much healthier alternative and you could not taste it at all! The flavors of the oatmeal and strawberries create a sweet and tasty snack!

STRAWBERRY OATMEAL BARS INGREDIENTS:

If you want extra sweetness in case your strawberries are not ripe enough, here are the ingredients for a vanilla glaze to top it all off!

HOW TO MAKE STRAWBERRY OATMEAL BARS:

  1. Preheat oven to 375 degrees
  2. Combine ingredients: First combine the oats, flour, brown sugar, and salt in a bowl. Then pour melted butter in until the dry ingredient clumps have moistened completely.
  3. Set aside 1/2 cup of the mix: the 1/2 cup will be used to top the bars off as a “crumple”.
  4. Add rest of the mix to an 8×8 pan or a bread pan: I like to add tin foil or parchment paper to be able to bring out the bars easily. Make sure to press the mix down firmly so they create an even and flat layer.
  5. Add other ingredients: Scatter 1/2 of the strawberries as the first layer. Then, sprinkle the lemon juice and the granulated sugar. Then add the other half of the strawberries on top. Finally, add the 1/2 cup of “crumple” mix to the top. (The strawberries may show on the top, that is completely fine)
  6. Bake for 30-40 minutes: Depending on how long you want yours to bake, I baked around 35 minutes so the bar would be golden and toasty. It will smell so good!
  7. Optional: If you want extra sweetness, while the bars are cooling, mix the powdered sugar, vanilla extract, and milk together and drizzle the glaze on top!

NOTES:

  • If you want your bars to be thinner, I suggest using the 8×8 pan. If you want a thicker bar, I suggest using a bread pan. I like using tin foil or parchment paper so it is easy to bring out the bars because they may crumple.
  • You can use frozen strawberries but make sure to pat them dry before. You may also need to bake them for longer in case they don’t cook fully.

These Strawberry Oatmeal Bars are the perfect sweet dessert treat that is still healthy and delicious!

Ingredients

  • 1 cup of oatmeal (I use instant but rolled oats work as well)
  • 3/4 cup of whole wheat flour (you can also use all-purpose flour or gluten-free flour)
  • 1/3 cup of brown sugar
  • 1/4 teaspoon of kosher salt
  • 6 tablespoons of unsalted butter (I use plant-based butter but you can also use coconut oil)
  • 2 cups of small sliced strawberries (I use about 8-10 strawberries)
  • 2 teaspoons of corn starch
  • 1 tablespoon of freshly squeezed lemon juice  
  • 1 tablespoon of granulated sugar

For additional sweetness, this vanilla glaze is perfect to drizzle on top!

  • 1/2 cup of powdered sugar
  • 1/2 teaspoon of pure vanilla extract
  • 1 tablespoon of any milk (I use soy milk)
