Ultimate Breakfast Burrito Recipe

Do you ever wake up in the morning so hungry you wanted a full platter for breakfast? Bacon, eggs, the whole shebang? Then this recipe is perfect for you. This breakfast burrito has everything you could want in a breakfast all wrapped into one… literally.

This is a recipe I came up with on my own just fiddling around in the kitchen one morning. Once I made it the first time, I knew it was something I would definitely be making again. It isn’t necessarily a quick breakfast to make, but it is surely worth the time it takes to make it! Another great thing about this recipe is that it is a single serving, so you don’t have to worry about crunching numbers if it’s just you for breakfast!

ULTIMATE BREAKFAST BURRITO INGREDIENTS:

Like any other recipe, this is just a guideline. If you like more of something or less of something else, add whatever you please. You like extra bacon? Go for it!

Bacon: The nice thing about bacon is that it can be as complicated or as easy as you want it to be. You can cook the bacon yourself. If you choose that option, when I make this I use four strips of bacon. Or, you could take the easier route and buy bacon bits from the grocery store. I actually went to my local Dunkin’ and bought a pack of their Snackin’ Bacon and used that. It worked great!

Eggs: I use two large eggs when I make this recipe, but if you want a bit of a fuller, fluffier burrito, I would use three or four depending on how hungry you are.

Cheese: Cheese is one of my absolute favorite ingredients to use when making anything. If I could put cheese on everything I would! Half a cup of cheese might seem like a lot to some people, so don’t be afraid to just sprinkle in however much cheese you want. I love using a Mexican cheese blend with eggs for extra flavor.

Veggies: Using veggies in this recipe is a great way to add flavor and texture to your breakfast burrito. I like using green peppers and onions. When I went to make this recipe this time I unfortunately could not find either in my kitchen so I had to make do with what I had. Like I said this recipe is great for making it your own and doing what you want with it!

Burrito: I always just use whatever burrito sized soft tortilla shells I can find at the grocery store. Any kind will do!

HOW TO MAKE THE ULTIMATE BREAKFAST BURRITO:

Make/prep the bacon. Cook the bacon in a skillet until it’s nice and crispy. You want it to be crisp so you can break it apart. After that you want to break the bacon down into bits. I usually just rip it apart in my hands but you can do it whatever way works best for you. If you’re feeling lazy you can always just go buy bacon bits or Snackin’ Bacon like I did.

Cook the eggs. Whisk the eggs then add the bacon bits and about ¼ cup of cheese to the eggs, salt and pepper to taste, then pour them into a frying pan and cook to your liking. Add veggies as you cook the eggs.

Prepare your burrito. I like to microwave it for about 15 seconds to heat it up a little bit. Then add your remaining cheese to the tortilla. Add your scrambled eggs and fold your burrito.

If you want to add a little bit more texture to your burrito, put a tablespoon of butter into a frying pan and fry the folded burrito until golden brown on both sides.

I just finished off the burrito off by cutting it into two pieces. Since I was at Dunkin’ I just had to get some of those delicious hash browns to go with my burrito!

Ingredients

  • About 4 strips of bacon
  • 2 large eggs
  • Pinch of salt and pepper
  • 1/2 cup of cheese
  • Green pepper and/or onion
  • 1 soft burrito tortilla shell

Instructions

    Cook bacon until crispy then tear apart into pieces.

    Whisk eggs 1/4 cup of cheese, salt and pepper then add bacon to egg mixture.

    Cook eggs and add in veggies.

    Microwave burrito for 15 seconds then add remaining cheese.

    Add cooked eggs to burrito then fold.
