Vegetarian Flautas
Flautas are one of my favorite Mexican dishes. If you don’t eat meat, try out this vegetarian version!

I’ve been vegetarian for about 2 years now and have learned to make Falutauas a Vegan or Vegetarian dish! We will swap out chicken for chickpeas in this recipe. If you like the idea of having chicken, reach for the Gardein Vegan Chicken!
A Flauta is a Mexican Dish most often consisting of a small tortillas and some type of filling. It pairs great with condiments such as sour cream or guacamole. We normally fry Flautas but in this recipe, we are baking them. It’s definitely a bit of a healthier alternative all around!

INGREDIENTS:
1 can of chick peas
1/2 tsp salt
4 tbs mayonnaise (regular or vegan)
Juice from 1/2 a lemon
1 tsp onion powder

HOW TO MAKE FLAUTAS:
Preheat your oven to 350 degrees Fahrenheit.
First, rinse and drain your chickpeas. Then mash the chickpeas in a large bowl.
Second, chop up your pepper and thinly slice your green onion. Add both to the bowl.
Next, add the salt, onion powder, mayo and lemon juice to the bowl and mix.
Add your mixture to each tortilla. Roll as tightly as possible. (They will stay closed if you place them seam down on the baking sheet).
Then, bake these for 15 minutes or until crisp.

Ingredients
- 1 can of chickpeas
- 1 red bell pepper
- 1 tsp onion powder
- 1/2 tsp salt
- 4 tbs mayonnaise
- 6 tortillas
Instructions
1. Rinse, drain and mash chickpeas
2. Add all other ingredients and mix
3. Scoop mix into tortillas
4. Bake at 350 F for 15 minutes or until crisp and enjoy!
