You will need:  1 cup pumpkin purée 2 eggs 3/4 cup coconut sugar 1/4 cup olive oil or melted coconut oil

1/2 cup of maple syrup or honey 1 teaspoon vanilla extract 2 teaspoons baking powder

1 teaspoon baking soda 1 teaspoon cinnamon 1/2 teaspoon nutmeg 1/4 teaspoon cloves Optional: 1/2 cup chocolate chips

Preheat oven to 350 degrees F. Grease a loaf pan with cooking spray and set aside. You can also line it with parchment paper.

In a large bowl, whisk together all of the dry ingredients (flours, baking powder, baking soda, cinnamon, nutmeg, cloves).

In a separate bowl, whisk together all of the cold ingredients and wet ingredients (a whole can of pumpkin, almond milk, olive oil, maple syrup, vanilla extract, eggs). You can add flax seed to the eggs before adding to make flax eggs.

Pour the wet ingredients into the dry ingredients and mix until everything is combined in a medium bowl. If you are adding chocolate chips, stir them in at this time. Get your greased loaf pan ready.

Pour the batter into the prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the center of the bread comes out clean.

Let the bread cool in the pan for 10 minutes before removing the whole loaf to a wire rack to cool completely. Remove from the cooling rack once cool.

Slice and serve as is, or spread with some almond butter or pumpkin butter. Enjoy!
