This Fruit Muffins are easy and super moist when you bit into them, that you won't want to stop eating them. The delicious flavors that come with every bite will make you want to add this recipe to your top favorites!

Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes

Ingredients

  • 3/4 Cup of Plain Non-Fat Greet Yogurt
  • 1 egg
  • 1 egg white
  • 1 medium banana smashed or substitute for 1/2 cup of applesauce
  • 1 Teaspoon Vanilla Extract
  • 1/2 Teaspoon Baking Soda
  • 2 Tablespoons Brown Sugar
  • 5 Tablespoons or 1/3 Cup of Splenda, no calorie granulated
  • 1/2 Tablespoon Baking Powder
  • 1 Cup of Blueberries
  • 1 Cup of Self Rising Flour

Instructions

  1. Preheat Oven to 350
  2. Line Cupcake Pan with Foil Liners
  3. Beat together egg, egg white, brown sugar and splenda
  4. Add in yogurt, banana or applesauce, and vanilla
  5. Continue beating for 1 minute
  6. Stir in Flour, baking powder, and soda
  7. Fold in Fruit and Fill 12 muffins
  8. Place Muffins in Oven and Bake for 20 to 25 minutes
