Weight Watchers Fruit Muffins

These delicious muffins are super easy to make and are weight watcher friendly. I loved making these the first time and have continued to make them on special occasions. If I am looking for a good snack or dessert to make, I put this on my top favorite recipes list. These muffins are super moist when you bite into them that you will want to keep eating more. The blueberries will explode your mouth and that is what truly makes these fruit muffins a one of a kind delicious treat for anyone who loves muffins.
FRUIT MUFFINS INGREDIENTS:
- 1 egg
- 3/4 Cup of Plain Non-Fat Greek Yogurt
- 1 egg white
- 1 medium banana smashed or substitute for 1/2 cup of applesauce. I used Applesauce as it makes the muffins moist.
- 1 Teaspoon of Vanilla
- 1/2 Teaspoon of Baking Soda
- 2 Tablespoons of unpacked Brown Sugar
- 5 Tablespoons of no calorie, granulated Splenda or 1/3 Cup
- 1/2 Teaspoon of Baking Powder
- 1 Cup of Blueberries
- 1 Cup of self-rising Self-Rising Flour
HOW TO MAKE FRUIT MUFFINS:
- Preheat Oven to 350.
- Line Cupcake Pan with Foil Liners. If you don’t have Foil Liners Line with the Regular, but be sure to spray cooking spray inside the liners or your muffins will stick.
- Beat together egg, egg white, brown sugar, and Splenda.
- Add in yogurt, banana or applesauce, and vanilla extract.
- Continue beating with a large spoon for 1 minute.
- Fold in your blueberries.
- Finally, take your batter and fill 12 muffins in Cupcake Pan.
- Bake for 20 to 25 minutes.
- Remove Muffins from Oven and your ready to eat!

- 1/2 Tablespoon Baking Powder
- 1 Cup of Blueberries

Instructions
