Ingredients
1 cup baby spinach leaves
1 cup basil leaves
2 cups shredded napa cabbage
1/2 cup English cucumbers diced
1/4 cup olive oil
2 garlic cloves
2 tablespoons rice vinegar
1/4 cup scallions
1/4 cup cashews (or nut of choice)
1 small shallot
1 teaspoon salt
Juice of 2 lemons
1/3 cup Bob's red mill nutritional yeast
Instructions
Combine spinach, basil, cashews, shallot, nutritional yeast, olive oil, salt, and garlic in a food processor or blender.
Next, add rice vinegar and lemon juice to food processor.
Blend until desired dressing consistency.
Finely chop your vegetables into small pieces.
Mix your salad ingredients: cabbage, cucumber, and scallions all together in a large bowl.
Then pour your dressing and mix until green cabbage is coated in the dressing.
