Ingredients

  • 1 cup baby spinach leaves
  • 1 cup basil leaves
  • 2 cups shredded napa cabbage
  • 1/2 cup English cucumbers diced
  • 1/4 cup olive oil
  • 2 garlic cloves
  • 2 tablespoons rice vinegar
  • 1/4 cup scallions
  • 1/4 cup cashews (or nut of choice)
  • 1 small shallot
  • 1 teaspoon salt
  • Juice of 2 lemons
  • 1/3 cup Bob's red mill nutritional yeast

Instructions

    1. Combine spinach, basil, cashews, shallot, nutritional yeast, olive oil, salt, and garlic in a food processor or blender.
    2. Next, add rice vinegar and lemon juice to food processor.
    3. Blend until desired dressing consistency.
    4. Finely chop your vegetables into small pieces.
    5. Mix your salad ingredients: cabbage, cucumber, and scallions all together in a large bowl.
    6. Then pour your dressing and mix until green cabbage is coated in the dressing.
    7. Serve with chips or a sandwich!
